PARTY MASHED POTATOES WITH BRIE
Saw Rachel Ray do this and it's delish!!
Brie/Yukon Gold Mashed Potatoes
2 pounds baby Yukon gold potatoes - skin on and quartered
Salt to taste
1/2 cup cream
1 Golden Delicious Apple peeled, cored and chopped (You can also use a pear)
1/3 pound wedge brie, cut into pieces
Quarter the potatoes, leaving the skin on. Place in a large pot, cover with water and bring up to a boil over medium heat. When the potatoes are cooked, drain and place in a medium bowl. Mash the potatoes and season with salt (if you want to - not necessary to add salt).
In a small pot combine the apple and cream and reduce over medium heat. Then add to a food processor the apple and the brie and process until smooth.
Then combine the apple-brie mixture with the mashed potatoes.
