Just thought this one up, and it has absolutely NOTHING to do with Thanksgiving......
BAKED PORK CHOPS
2 Boneless Center-cut Loin Chops (about 1/2 lb each)
3/4 cup white rice
2 cups sliced mushrooms
1 cup frozen Petit-Pois (frozen baby peas)
1 pkg frozen vegetable medley (12-oz) unseasoned, please
1 cup Organic Mushroom Broth
1 cup Organic Chicken Stock
1 tbls Mustard (I used Dijon)
Preheat oven the 375
Place raw rice in the bottom of a casserole with a cover
Top with mushrooms
Then the frozen peas
Then the vegetable medley
Then brush the mustard on the pork chops
Place chops on top of the vegies
Then pour the 2 cups of broth
Cover and bake for 50 minutes.
Remove from oven and let sit for 15 minutes before you take the lid off the casserole.
Pork will be flavorful and fork-tender.

I tried this after my brother, Glynn, turned me onto you & this blog! Delicious, but I have to admit it did start out with one of my favorites -pork!
