EVEN FRIENDLIER KIDNEY-FRIENDLY BAKED CHICKEN

Since my last recipe, I've learned even more and offer this:
 
FRIENDLIER KIDNEY-FRIENDLY BAKED CHICKEN
Ingredients
3/4 lb. boneless, skinless chicken breast, cut in half
1 cup Organic Vegetable Stock 
1/2 larger red onion, chopped.
1/2 large bag frozen cauliflower
1/2 cup defrosted frozen sliced peppers, green, red & yellow
2 medium-sized raw turnips chopped into bite-size pieces
Mrs. Dash Tomato Basil Garlic
2 cloves garlic, bluntly chopped.
1 large zucchini, chopped into rounds
Drizzle of EVOO

Method:
Pre-heat oven to 400 degrees
Place chopped onion & garlic in the bottom of a pyrex dish with cover
Top onion with cauliflower, the peppers, then turnips, then zucchini pieces.
Sprinkle liberally with Mrs. Dash    
Place the two chicken pieces on top of veggies and drizzle with EVOO and more Mrs. Dash
The pour 1 cup of the vegetable broth down the side of the ingredients, careful not to pour on chicken
.Cover and bake 40 minutes at 400 degrees.  After 40 minutes, I just turn off the oven and let the casserole cool.  Or you can eat it right away.

It's delicious and very friendly in the potassium and phosphorous departments.  ENJOY!!

And that's what I just had for dinner.  YUM
