HAM AND EGG CASSEROLE


HAM AND EGG CASSEROLE

1 Onion, chopped
1/4 cup green pepper
1/4 cup butter, melted
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk (whole milk, please)
1 1/2 cups cubed cooked ham
4 hard-cooked eggs, sliced
1 cup condensed Cream of Mushroom soup
2 cups buttered bread crumbs

Sauté onion and green pepper in butter. Blend in flour, salt and pepper. Add milk (warmed) and stir until smooth. Add ham. Layer ham mixture and eggs slices in a 2-quart casserole. Top with bread crumbs and bake at 350 for 30 minutes.

Serves 6
