
My friend Louise sent me a wonderful article about cabbage and, naturally, it jarred my memorons about a dish I invented years ago. Here goes:
I was in Los Angeles staying with my friend Tom Edwards, who wrote "Della's Diner" - so popular in Atlanta in the 80's. Tom said for me to fix dinner while he was at work.
So, I didn't have a car and this was what was in the apartment and I created this: (Warning: it's not calorie-counscious!)
CABBAGE RICHARD
1 large head of cabbage shredded
1 lb sweet Italian sausage
1/2 pound bacon - cut in 1-inch pieces
1 pt. sour cream
Sesame seeds.
I cut the skins from the sausages and browned the meat up along with the bacon in a large frying pan.
Remove the meats from the pan and put aside.
Discard most of the grease, but not all. Put the shredded cabbage on top of the grease and cover until the cabbage is wilted. (over low to medium heat).
When cabbage is wilted. Add the sour cream and the meats back in and toss. Sprinkle with Sesame seeds to taste.
It's very good, too! Believe it or not.
